Cauliflower rice

Cauliflower rice is tasty and healthy side dish, good substitute for the regular rice. It is low-carbs and packed with fiber. It is surprisingly easy to make… and how delicious it is! To boost the flavor, add spinach and spices to your taste.

Ingredients for 2 portions:
½ cauliflower, middle size
2 tsp cumin seeds
salt and pepper
0,5 oz/15 g spinach, chopped
4 spinach leaves for decoration
chili flakes to sprinkle on top
2 tbsp olive oil
½ cup water

Method:
1.Cut cauliflower into smaller pieces and blend until it reminds rice.
2.On the dry pan toast cumin seeds for 30 sec until fragrant, set them aside.
3.Heat the olive oil on the medium heat and add cauliflower rice. Cook few minutes, stirring.
4.Add toasted cumin seeds, salt and pepper, stir.
5.Add water, cover with lid and cook for about 6 minutes until soft.
6.Add chopped spinach, stir for a minute, remove from heat and serve immediately.
7.Decorate with spinach leaves and chili flakes.
